Not a staple regular in many diets, I have fond memories of eating toasted sandwiches that have cabbage in them. The only other time, I probably have cabbage is with my chowmein, cooked Indian style. I have two quick fix meals to share, that include cabbage. Be warned, un-clean, or cabbage that is not properly washed and cut, can be a haven for worms/eggs that will eventually find their way to your stomach and insides. Hence it is always a safer option to cook cabbage, than to have it raw. However these two options do not involve much of cooking, so be careful with your cleaning and chopping! 1) Cabbage sandwich - For this you need - 1) Sandwich maker - Yes, no fun without it 2) Bread 3) Cheese - Spread or whole, as long as it can be mushed and mixed 4) Equal portions of - Cucumber, carrots, tomatoes, cabbage (slightly more) and very little onion (probably 1/4th portion) 5) Salt - to taste, Black Pepper - To add flavor. Chilli powder can be added as well. Preparation - - Chop all the vegetables into small pieces. you can use a grater for the cucumber, cabbage and onions. - Add 2 tablespoon of cheese to about 2 cups of mixture. You can alter the proportion according to your taste. If you are planning keep the mixture in the fridge, recommend adding the cheese only at the time of cooking. - Put a little bit of butter or olive oil on the bread slices (inside) before placing them in the sandwich maker. - Add the mixture, put bread slice on top, and close the sandwich maker. - Wait about 1 minute, until toasty brown, and enjoy with ketchup or chilli sauce. Cabbage sandwiches are best enjoyed with chilled cold coffee 2) - Cabbage salad - You need - - Green chillies - Mustard seeds - Oil for cooking, preferably olive oil - Curry leaves - 5-10, depending on desired flavor - Carrot - 1 should be enough - Cabbage - Equivalent to the carrot amount, though slightly more. - Peanuts - skinned and powdered (optional) - Coconut - about 2 tablespoons for one salad, I would use loads. - Sugar and Salt to taste - Lemon Juice - 1 small should be enough. Preparation - This is slightly tedious, but the preparation is grate both cabbage and carrots using a grater. Once done, mix seeds, chillies, curry leaves and oil in a non-stick. Once the seeds and curry leaves release their flavor (about a minute) remove from non stick and keep aside. Mix the remaining items in a salad bowl, and use the mixture prepared on the non-stick to add flavor to this mixture. Voila.
